Pecan Flour (Meal)

Pecan meal is just Texas pecans, ground fine. It puts pecan flavor into anything you bake, without chopping a nut.

• Pie and cheesecake crusts: press it in with a little butter and sugar
• Breading for chicken, fish or pork chops
• Swapped in for part of the flour in cookies, muffins, quick breads and pancakes
• Stirred into oatmeal or yogurt
